Healthier Grilling for Vegetarians
I am embarrassed to admit that I don’t know how to turn my grill on. To be fair, it is finicky and almost always flares up when you turn it on so I am just trying to be safe. The truth is my father is the only person in the house willing to risk it.
I don’t love store-bought veggie burgers so over the years I have found some easy, healthy foods to throw on the grill at the last minute. Gotta take advantage of the char-marks and natural smokiness of a real grill.
Pineapple: Buy pineapple in spears or cut them into thick long chunks. You want even pieces for a nice even caramelization. Skewer the pieces down the center and set them aside. Clean and spray the grill, and then place the pieces evenly with tongs. They are super slippery and don’t tend to stay put, so don’t try to turn the actual skewer. Grill for a few minutes on each side and remove it when evenly caramelized. Goes great with vanilla or rum raisin ice cream.
Lightlife Smart Dogs: Okay I hadn’t eaten a hot dog for about 9 years and one day I just thought... there must be a veg alternative they have them for everything. Big shock—they sell Smart Dogs everywhere I just never noticed.
I don’t particularly like fake meats but all three cooking methods are tasty. You can microwave for efficiency, boil for a realistic pop, or (my preference) grill them.
Portobello Mushrooms: Really Classic, rich and meaty, hold up well on the grill, super versatile. You can grill these up as a burger patty alternative OR you can grill up all three of these for a complete veggie-friendly meal.
Veggies, hot dogs, AND desserts are all made on the grill. Altogether super filling but vitamin and nutrient-rich.
It doesn’t always have to be veggie kabobs!
